Skakshuka riff
Hey all! Long time no hear ehh?
Yeah, sorry about that.
The good news is that I finally have the cobwebs shook off the website, and have restated my hosting account for future podcasts etc, so MAYBE I'll post more consistently soon. Maybe.
Anyway- Today is a day off for me, and I've been working on some recipe development, and I just came up with a killer riff on Shakshuka- Eggs in tomato. I will be running Shakshuka soon as a special at Coastal Wine Market where I'm the chef, and it will be a little more involved than this one, but holy cow I dig this one ALOT-and it's dead simple.

In a cast iron skillet or other heavy pan simmer on small can of diced tomatoes with peppers. I used Rotell brand just because I had them in the cubboard. Add about half a can of Manwich sauce (yes-that Manwich). Simmer till it thickens a bit.
Add some Zatar seasoning mix. About a teasoon.
With a spoon, make some divots in the sauce.
Gently crack eggs into the divots.
Crumble in some blue cheese or goat cheese.
Simmer until the eggs are set to your liking. I like mine just barely not running for this dish. Cover with a lid if you need to trap some extra heat t firm them up.
That's it. You're done.
Scoop out with a big spoon and enjoy the Oooo's, and Mmms..
